Right along the downtown riverfront, The Hub Food Park brings Mankato's best local food trucks together in one spot. Our rotating Food Truck Series features a fresh lineup each week — from burgers and pork sandwiches to Puerto Rican classics, Lao and Thai favorites, handmade pupusas, and authentic Mexican street food.
